“Speculoos” Granola with Banana Cashew Yoghurt and Raspberry Compote

I hope this breakfast will bring back memories of your childhood, as it does for me – this probably comes from the smashed bananas … YUM!

It’s the perfect combination to give you just the right boost to get the day going- crispy, creamy, tangy – it’s all in there. For those of you who have lost their pleasure and inspiration in breakfast, this will get you out of bed and you won’t be snacking all morning in anticipation of lunch!

You will need:

Fig & Buckwheat “Speculoos” Granola

For the Banana Cashew Yoghurt:

1 over-ripe banana

1 tsp cashew nut butter

2 tbsp yoghurt (use soy for dairy free / vegan)

1 tbsp honey

For the Raspberry Compote:

1 handful raspberries

1/2 tsp honey

1 tbsp water

Follow the Fig & Buckwheat “Speculoos” Granola recipe or you can of course use ready made granola (but it won’t be as good! 😉 ).

Mash the banana, then add the other ingredients and either whisk or blend together until smooth and creamy.

Pop the raspberries with the honey and water in a pot and cook slowly until soft and easily mashable.

Layer the granola in a bowl, topped with the banana yoghurt and finished with the raspberry compote.

Garnish with a sprinkle of granola, fresh fruits and frozen raspberries for extra zing!
