Salted Caramel Brownies

AKA The Gooeyest Brownies EVER!

I’m not really one for the sweet stuff … but even I can’t ignore a slice of this. It’s really easy, don’t need crazy ingredients and your friends will be forever grateful. Also, no need to buy 1000 different types of chocolate – one pack will do and you can just chop up the extra to make the chocolate chips.

200g dark chocolate (160g for melting, 40g for chocolate chips)

110g butter

110g sugar

2 medium eggs

30g flour (I use Dove’s Farm Gluten Free White Flour Blend)

3/4 tsp baking powder

1/4 tsp salt

1/4 tsp xanthan gum (not absolutely necessary; Dove’s flour is pretty amazing already)

1 tbsp caramel

Maldon salt flakes

Preheat the oven to 175°C

Melt the chocolate with the butter over a bain marie (this will prevent the chocolate from burning). As soon as they are melted, let them cool.

Whisk the eggs with the sugar. When the chocolate is cool, add to the egg mixture. Do not do this if it is still hot or the eggs will scramble (and nobody wants scrambled brownies, yuck).

Sieve the flour, baking powder, salt and xanthan gum into the chocolate mixture and mix through well.

Chop up the remaining 40 grams of chocolate and fold them into the mixture.

Fold in the caramel.

Shove a piece of parchment paper in a baking tin and pour your brownie mixture in. Bake for 20-25 minutes or until a knife comes out clean.

When it’s ready, heat up the caramel 10 seconds in a microwave and drizzle it over the brownies. Sprinkle over Maldon sea salt flakes and dig in!
