Coconut Granola

A healthy alternative to the store-bought granola that contains who-knows-what kind of oils – this recipe possesses the many benefits and virtues of the wonderful coconut oil.

Not only is it so easy to make your own granola and way cheaper to make than to buy; it’s also just so much more satisfying to know exactly what’s in your breakfast bowl in the morning. After all, breakfast is the most important meal of the day, so better fill it up with love and good stuff so you’re ready to attack the day ahead!

You will need:

300g gluten-free oats

1 handful nibbed almonds

1 handful flaked coconut

2 tbsp sesame seeds

(You can play around with these ingredients and also add pumpkin seeds, sunflower seeds, nibbed hazelnuts, the list goes on…)

50g wild honey

50g coconut oil

1 tsp muscovado sugar

1 pinch salt

Start by heating the coconut oil, honey, sugar and salt so that the coconut oil melts and the sugar is dissolved. Whisk well.

Add to the dry ingredients and mix through.

Transfer this mixture to a tray, spread it out and pop it in the oven at 120°C for about 45 minutes or until golden brown. Mix through every 15 minutes or so.

Keep in an airtight container and enjoy every morning with a fresh fruit smoothie or a creamy greek yoghurt!
