A little colourful change from the classic “smashed avo and tomatoes”.
4 Slices of (Gluten-free) Sourdough
Freshly cracked black pepper
Maldon sea salt
Slice up 4 pieces of bread and toast to your liking.
Spread over some beetroot hummus. Peel and cut your avocado into 2. Slice up each half, and put one quarter on each toast, spreading it out. Squeeze a little lime juice on top and sprinkle some Maldon sea salt and cracked black pepper. Top with alfalfa sprouts, rocket, radishes and pomegranate seeds. Squeeze a little more lime juice over and season.
