Avocado on Toast

Yes yes, we all know avo on toast, and there are probably way too many versions out there… but are there? There’s room for a little extra one in my opinion, one full of colours (pinkpinkpink) and textures and flavours, something to change from the classic “smashed avo and tomatoes”.

For 2

Toast (I used wholefoods’ gluten free multi seed toast – de-licious)

Beetroot Hummus

1 avocado

1 lime

Alfalfa sprouts

Rocket, washed

Pink radishes

Pomegranate

Freshly cracked black pepper

Maldon sea salt

Slice up 4 pieces of bread and toast a few minutes.

Spread over some beetroot hummus. Peel and cut your avocado into 2. Slice up each half, and put one quarter on each toast, spreading it out. Squeeze a little lime juice on top and sprinkle some Maldon sea salt and cracked black pepper. Top with alfalfa sprouts, rocket, radishes and pomegranate seeds. Squeeze a little more lime juice over and season.
